Nursery: Parent and Carer Wellbeing

 Dear Parents and Carers,

We hope you were able to make some time for yourselves over the weekend and perhaps even joined in with Mrs Light's yoga videos.

Today, Mrs Light has shared her Rock Cake recipe, as baking is one of the things that help her to relax.

"I thought I would share these two recipes with you all to do at home. I would love to see photos of your cakes,"

Rock cakes Ingredients (makes about 10-12)
225g self-raising flour
75g caster sugar
1 teaspoon baking powder
125g unsalted butter or margarine
150g dried fruit
1 egg
1 tablespoon milk
2 teaspoon vanilla essence

Method
1. Preheat oven to 180 or gas 4 and line a baking tray with baking parchment.
2. Mix the flour, sugar and baking powder in a bowl and rub in the cubed butter until the mixture looks like breadcrumbs.
4. Mix in the dried fruit.
5. Beat the egg, milk and vanilla essence in a clean bowl.
6. Add this mixture to the dry ingredients and stir.
7. Place a golf ball size mixture onto the baking tray (makes about 10-12).
8. Bake for 15-20 minutes.
9. Allow to cool then turn them out onto a wire rack. Enjoy!
