Dear Parents and Carers,
We hope you were able to make some time for yourselves over the weekend and perhaps even joined in with Mrs Light's yoga videos.
Today, Mrs Light has shared some of her cupcake recipes as baking is one of the things that help her to relax!
"I thought I would share these two recipes with you all to do at home. I would love to see photos of your cakes,"
Vanilla cupcakes
Ingredients
150g unsalted butter or margarine
150g caster sugar
175g self-raising flour
3 eggs
1 teaspoon vanilla essence
1. Place per cake cases into your bun tray.
2. Put all the ingredients into a mixing bowl and beat with a hand mixer for 1-2 minutes.
The mixture should turn light and creamy.
3. Divide the mixture into the cake cases.
4. Bake in a preheated oven 180, gas 4, for 18-20 minutes.
5. When cooked transfer to a wire rake to cool, then they are ready to decorate.
6. You can use various coloured icing sugar together with sprinkles, smarties and jellies for the children to decorate. Enjoy!
